An advanced approach to three main areas of food service management: personnel, finance, and labor relations. Through lecture, case study, and analysis of current research reports, the principles of finance, managerial accounting, and the use of the computer are explored, as are general theories and concepts of management/personnel communications, labor relations, and legal problems in the food service industry.
